Weight loss retreat cod with vine tomatoes
The Friday Dinner at FitFarms Weight loss retreat is fresh cod served with cherry tomatoes and a homemade pesto sauce.
Ingredients per person
250 grams of Atlantic cod
10 Vine Cherry Tomatoes
2 Handfuls of kale
1 cup of basil leaves
4 cloves of peeled garlic
2 tablespoons of pine nuts
2 tablespoons of walnuts
1/3 cup of grated parmesan
1/3 cup of good quality virgin olive oil
Cornish rock salt and ground black pepper to season
Put the basil, garlic, pine nuts, walnuts, and parmesan into a food processor and blend together.
Drizzle the olive oil and season until you have the correct thickness and taste.
Place into a fridge overnight
Place the cod and vine tomatoes onto tin foil and make into a parcel season with salt and pepper and put into a 180 degree oven for 20 minutes.
Whilst this is cooking steam the kale.
Make a bed of kale on a plate, place the cod and cherry tomatoes on the top. Finally drizzle the pesto sauce over the cod.
