Weight Loss Camp Thai Green Curry with Cashew Nuts

This has always been one of the favoured dishes at the weight loss and fitness camp FitFarms. It’s warming and you can decide how much of a chilli kick is needed.

First of all we need to decide if you want to make your Thai Green Curry Paste or buy it. There are some extremely good quality pastes in the supermarket but personally I believe nothing holds the intensity of a fresh paste.

I’ve found the best Thai Green Curry Paste is in Waitrose. Here is the link to the paste at Waitrose Tescos also do their own brand which has a great intense flavour.

1 tsp coriander , 1 tsp cumin, 1 tsp turmeric, 2 tbsp chopped coriander, 4 green cayenne peppers deseeded and chopped, 6 Thai green chillis, 1 red shallot, 1 lemongrass stalk, 5 garlic cloves, 2 tsp shrimp paste, 2tsp lime zest

Preperation

Simply put all the ingredients into a food mixture and whizz up into a paste. If you like your curries hot just add more chillis or less if you prefer mild chillis

Curry Ingredients

3 chicken breast chopped into biteable sizes (1 inch), 120ml vegetable stock, 500ml coconut milk, small bunch of coriander roughly torn, 3 cloves of garlic, 1 red onion, 4tbsp Thai Green Curry Paste, 2 tsp coconut oil, 4 mixed peppers sliced long ways, lime cut into quarters, 8 tbsp cashew nuts 4 pak choi (roughly chopped)

Add the coconut oil into a non stick frying pan and then place in the onions, garlic and cook until soft at a medium heat. Then add the Thai Green Curry paste, chicken and cook for 8 minutes.

Make to season using a good quality sea salt or himalayan salt and ground black pepper.

Put the coconut milk into a pot and over a low heat warm the milk. Then add the chopped pak choi and peppers. Keep at a low heat and add the contents of your frying pan. Cook all the ingredients at a medium heat for 20 minutes.

Serve with lime and coriander and cashew nuts for that extra protein.
