FitFarms Retreat Three Bean Mexican Chilli

Why we have the three been chilli on the FitFarms weight loss retreat?
The FitFarms three bean mexican chilli has been inspired by the original chilli con carne and at a later date the beans were added. It's one of the best health dishes you can make because its high in plant and animal protein which supports muscle repair and maintenance, stabilises energy levels and also keeps you fuller for longer. The FitFarms three bean chilli is also packed with fibre, vitamins and minerals.

Ingredients Serves 4 people
1 tbsp rapeseed oil (rapeseed is better than olive oil because olive oil has a low flash point giving off toxins)
1 onion finely chopped
3 garlic cloves crushes and finely chopped
1 red pepper finely chopped
500 grams of minced beef (go for lean because it has higher protein levels and less saturated fat) or 500 grams of quorn for the vegetarian option.
1 tsp cumin
1 tsp dried oregano
2 tsp chilli powder
1 tbsp tomato puree
1 tin of good quality chopped tomatoes (look for deep red in colour tomatoes)
1 tin of kidney beans
1 tin of cannellini beans
1 tin of butter beans
200 ml of veg or beef stock (go for fresh and stay away from the granules)
Salt and Pepper to taste
Cooking Method
1) Create a good quality base by heating up the rapeseed oil in a large pan, gently cook the onion for 5 minutes, then add garlic and pepper cooking for another 5 minutes.
2) Add the meat or quorn mince then turn up the heat to brown off, breaking it up and gently stirring as it cooks.
3) This process is called toasting the spices. Simply stir in the cumin, oregano and chilli powder. Cook for 2 minutes to release the spices and then add in the tomato puree.
4) Add the tomatoes, stock and simmer for 10 minutes.
5) Add in all the beans and keep simmering with the lid off for a minimum of 40 minutes stirring occasionally.
6) Finally season with salt and pepper.
Chefs Tip - add a small piece of dark chocolate (over 70% chocolate) to deepen the taste of the chilli
Nutrient Breakdown - Calories 450 kcal - Protein 35 grams (28 grams when using quorn - Carbohydrates 35 grams - Fat 10 grams (only 3 grams are saturated when buying good quality beef, 1 gram if you use quorn)
