FitFarms Retreat Frittata

Healthy FitFarms Retreat

Frittata is a firm favourite at the FitFarms weight loss retreat—and one we love to make! Perfect all year round, it’s just as delicious for breakfast as it is for lunch or dinner. Enjoy it hot or cold, with plenty of protein from the eggs and mozzarella cheese. It’s one of the most versatile dishes around.

Ingredients (Serves 4)

10 large eggs 250g mozzarella cheese, drained and torn 1 medium pepper, diced 1 medium courgette, diced 1 small red onion, finely sliced 80g spinach 150g cherry tomatoes, halved 1 tablespoon rapeseed oil Salt and black pepper, to taste

Method

Preheat the oven to 180°C fan (200°C conventional). Lightly grease a medium baking dish with rapeseed oil.

Add the diced pepper, spinach, courgette and sliced red onion to the dish. Toss with a little rapeseed oil and roast for 20 minutes, until softened.

Add the halved cherry tomatoes and gently mix.

Beat the 10 eggs in a bowl and season with salt and black pepper. Pour over the vegetables and scatter the 250g of drained, torn mozzarella evenly on top.

Bake for 45–60 minutes, until golden and fully set in the centre.

Leave to rest for 5 minutes before cutting into four portions.

We usually serve frittata for lunch at the FitFarms residential weight loss retreat, but it’s just as delicious for breakfast or dinner. Essentially an oven-baked omelette, it’s wonderfully versatile—swap the vegetables to suit your taste or add meat for a change.

Enjoy it hot or cold, and you can batch cook and keep in the fridge for a quick, healthy meal. Refrigerate within two hours of cooking and eat within 3 days if you've added meat and four days if it's vegetables.

It's really simple to make and super tasty.
