massamanMassaman Thai curry is relatively mild but if you need a little more heat just add some more chilli.

You can buy a decent healthy Massaman paste from the supermarket but if you have more time making your own is always going to be better. When buying the paste make sure to check the ingredients making sure the herbs and spices come first and avoid chemicals and sugar or at the least make sure they’re very low down the ingredient list.

OK first lets make a traditional massaman curry paste.

1/4 cup dry roasted unsalted peanuts

2 shallots

5 garlic cloves peeled

2 re chillies add another 1 if you want to move up with the heat

1 inch of ginger

1 stalk of lemongrass

tsp coriander

tsp cumin

1/8 tsp nutmeg

1/2 tsp cinnamon

1/8 tsp ground cloves

1/4 tsp cardamon

2 tbsp fish sauce

1 tbsp shrimp paste

2tsp maple syrup

3 tbsp coconut milk

Now you’ve got all the ingredients together all you have to do is put into a blender and blend away to create a paste. If you want to turn it into ┬ásauce add a tin of coconut milk. This is the typical southern Thai style way which has Indian influences in the spices.
