This dish always looks impressive just because it’s quite unusual looking.

It’s really easy to make and you can be creative with the toppings. This one is smoked paprika, chives and basil but a very popular one is to use chilli and cheese.

Ingredients Serves 6

3 Avocados

6 Eggs

Himalayan salt or a good quality sea salt

Ground Black Pepper

Fresh Chives

Smoked Paprika

Basil

Method

Cut the avocados in half and take out the stone. Using a teaspoon scoop a little avocado out to make the area larger where the stone was. Crack the egg and pour into the scooped area. Season with salt and pepper. Place in a 180 degrees oven for 20 minutes. Take the avocado and egg out of the oven and sprinkle with smoked paprika, basil and chives.

This is a nutritionally dense breakfast full of healthy fats and protein.
